Lunch Chat!

It’s been a a minute since we talked about what we were having for lunch.  So let’s.

I’m having some veggies and dip–although I just bought a new dip and haven’t tasted it yet, so it may or not be a good lunch.  I also have various cheeses and some Triscuits, and then a chocolate chip cookie.  Tomorrow, though, I’m going to lunch with a vendor, and I have to choose between a Denny’s and somewhere called “Country Kitchen.”  What a life I lead!

  1. Go for Country Kitchen over Denny’s.

    I will be having the cafeteria’s “baked potato bar” which may or may not be good but will probably have lots of cheese and maybe some bacon. #muchhealthy #sofood

  2. I am having leftover pasta that I made last night with an almond tomato pesto sauce. It was pretty good, but not amazing. I’m trying to cook more at home because last month I was terrible about eating take out so if anyone has recipe suggestions that require minimal work, holla.

    I too had leftover pasta. I made a sauce with sauteed farm stand tomatoes and pesto sauce. I am not much of a cook, but I’ve definitely improved from my bachelor days.

  4. My lunch is SO GOOD today. It’s salad with leftover Parmesan chicken, BUT, I also had leftover chicken wing dip, so I mixed that into the salad and it was scrumptious. I also have a banana and cheese and crackers for later.

    • I think chicken wing dip (or “Buffalo Chicken Dip” as I call it) is so great. It’s pretty much a meal on its own with wheat thins or chips or whatever.

        I love Buffalo Chicken Dip. The last time I made it I did it from a leftover chicken I had cooked earlier in the week. Having a mix of light and dark meat in it was 1000x better than just using boneless skinless breasts like most recipes call for. Chicken: it’s not just for texture anymore!

      • It’s so freaking good. (I’m near-ish to the Buffalo area– I’ve been to both restaurants that claim to have invented Buffalo sauce; FOOD HISTORY–so it’s always funny to hear people refer to anything “wing” related as “Buffalo”-whatever. Wings are just wings here, unless they’re specifically BBQ or garlic butter or something.)

    It was a coworker’s birthday over the weekend and they brought in leftover ice cream cake! I’m having ice cream cake for lunch. Livin’ the dream!

    I have a spinach and romaine salad with 3 colors of peppers, a hard boiled egg and cucumber slices. Working hard at my good eating at lunch because tonight I am going to a reeeeeally yummy pizza place called “Pig Ate My Pizza” and that will no doubt be a free for all. Hooray!!!

    It is 9:30 am where I work so the lunch equation hasn’t been solved yet. There is always a food truck outside but today’s will be the truck called “Slammin’ Sliders” which is goddamn stupid so I’m not eating there. (I am waging a very angry one-man protest against the world until people stop saying “sliders.”) So maybe I will go to the mall for a salad? But I also need a car wash so maybe I will eat something along the way to that? Or there might be a meeting with sandwiches I can raid. Everything important is up in the air.

    I made a little tart with sweet potato crust and spinach, quinoa, mushrooms, and smoked maple salmon. I have also had about 30 mugs of lemon and honey in hot water today because I am a big old sickie but working from home means I don’t have an excuse to watch Golden Girls in my pjs all day 😦
